How-to Instructions

One of the many missions of the US Department of Agriculture is to produce "how-to" publications for farmers, homesteaders and other related parties on topic related to the production, preservation, preparation and transportation of food to assure food safety.

During the 1930's, after getting an advanced education, you became an employee of this government agency. Since you were originally from the Midwest, your supervisor instructed you to write instructions for food preservation in the Ozarks. Write clear step-by-step instructions on how to preserve vegetables both in the winter and in the summer. Include at least three methods for winter preservation when canning is not available. Remember to keep it simple; many people in rural areas only have an elementary education if even that!
